Minute Muffins
* I found this recipe on a weight-loss forum...I don't remember which one...when I do, I will post the link to it :)

1/4 flax seed meal
1/2 teaspoon baking powder
1 packet Splenda (I used Stevia instead)
1 teaspoon cinnamon
1 large egg
1 teaspoon butter

Stir dry ingredients together in a coffee mug...Add egg and butter, Mix thouroughly. Microwave 1 minute. Eat with butter.  Total Net Carbs: 1.5 grams



Country Fried Steak
* My step-dad came up with this recipe!

Cubed steak dipped into 1 egg and then coated with a mixture of flax seed meal and equal parts of salt, pepper, onion powder, garlic powder, and celery salt ...approx 1 teaspoon total (he makes the spice mixture ahead of time of 1 Tablespoon each and then adds to dishes to taste). Then fry in canola oil. Total Net Carbs: 1.8 grams


Pork Rind Pizza Crust

* I found this recipe on a weight loss forum. It stated that this recipe was posted on   http://www.thatsmyhome.com/venettos/pizza/pork-rind-pizza-crust.htm

1 bag pork rinds, crushed
1/2 Cup shredded mozzarella cheese
1/4 Cup grated Parmesan cheese

3 eggs, beaten


Mix all the ingredients well. press into a nonstick sprayed pie pan, going up the sides. Bake at 350ºF for about 8 minutes.


Add your toppings, and then rebake until cheese and toppings are hot. This recipe can easily be doubled to fit a pizza pan.


**The Total Net Carbs for the entire crust is 3.2 grams , your choice of toppings will affect how many carbs the end product will be.



 Chocolate Smoothie

1/2 cup heavy cream
1/3 cup sugar free chocolate syrup
2 TBS cocoa powder
4 ice cubes

Blend well and serve. Total Net Carbs: 14.67 grams

** This is a high carb content. Not sure how the Atkins site had a lower net carb count....but I split this with my son. He had 2/3 of the mixture and I had 1/3 of the mixture, which brought my net carb count down to 4.89.
